12 Days of Christmas Cookies - Day 1

Today I made these cookies from Company's Coming for Christmas cookbook with my 9 year old daughter and 3 1/2 year old son. It was really easy to put together.

Flake Macaroons

  • 2 Egg Whites
  • 1 cup Granulated Sugar
  • 1 tsp Vanilla
  • 2 Cups Corn Flakes
  • 1/2 cup Chopped Pecans or Walnuts
  • 1 cup Fancy flake coconut

Beat Egg whites in small bowl until stiff. Transfer to a large bowl.

Sprinkle 1/3 sugar over at a time, folding in after each addition. Fold in vanilla.

Fold in corn flakes, pecans and coconut. Form mounds of about 1 rounded teaspoon. Place about 1 inch (2.5 cm) apart unto greased baking sheet. Bake in 350*F (175*C) over for about 15 minutes. Makes 24 cookies.

We've been using crushed cornflakes for a chicken coating. Nice and crispy and lovely flavour. Noticed when we were shopping that a TINY box of crushed cornflakes costs around $6. I laughed and laughed.

I can't do coconut or I'd try these...

You could probably eliminate the coconut...
